Recipe idea
SKIRT OF BEEF WITH HALF-LONG SHALLOTS
For 2 skirts of beef, brown gently 6 chopped shallots in a piece of butter.
Add a small glass of red wine when the shallots are golden.
Put black pepper and salt and let it reduce slowly.
Fry the skirts according the cooking required and add the “shallot sauce” when the skirts are almost cooked.
